So, if we assume that all the other variables are uniform, then if you measure the coffee by weight then dark roast coffee has more caffeine in it due to the faster water lost during its roasting process. Now, interestingly, if you measure the coffee by volume, you will have lesser caffeine in dark roast coffee because the beans lose their density in the roasting process and thus are lighter.

So measurement with scoop will result in less caffeine level and measurement by weight will lead to higher caffeine levels per cup. So it all depends on how you measure your coffee’s caffeine contents. The differences that you will notice will not be very large. Moreover, this disparity only arises if you have identical cups of coffee under analysis.

It is plausible only if you are comparing two available brewed coffees that a differentiation in varietals among them could make them have as much effect as the roast and the preparation method will almost certainly had a larger effect than the roast level or varietal. If there is a Robusta in one of the coffees it is almost guaranteed to have more caffeine. This is mostly a scholastic debate because the differences in caffeine content are relatively very small and difficult to find out.

Colors of Coffee Beans During Roasting

Roasting is one of the most significant aspects of making good quality espresso. It is also the reason for one of the more dramatic changes a coffee bean undergoes. Not only does the colour of it change from green to dark brown or black, it also dramatically changes size, weight, density and chemical make-up. This article highlights some of the color changes a coffee bean undergoes during the roasting process.

Green

All roasting begins with tiny, hard green beans. The beans come from the seed from the coffee plant’s cherry. Each cherry has between one and three beans inside, but two beans per cherry is most usual. Green coffee has already been dried and processed in the country that the coffee was produced (the production country). These green beans are wrapped in a silver skin that is mostly removed during roasting. When the Green Beans are dropped into the roaster, the roaster’s temperature will quickly drop and then begin to slowly rise.

Yellow

After a couple of minutes the beans will lighten in color and become yellow or orange. The coffee bean is losing moisture and absorbing heat. Because they are absorbing heat, the beans are considered to be endothermic. The beans will show a consistent pale yellow color that progressively becomes darker.

Tan

As the coffee beans warm up chemical reactions begin inside the bean. Sugars begin caramelizing, which can be seen by the beans becoming a deeper tan color with a blotchy surface. These chemical reactions generate co2 that builds up inside of the cells of the coffee bean. The gas is under high pressure and causes the bean to expand somewhat. Due to this expansion, the silver skin coating gets broken and begins to come off. This substance is called chaff and you will see it mixing in along with the espresso beans.

Brown

While the caramelization proceeds the beans become darker and more even in color and new flavor compounds are made by a process generally known as Maillard reactions. The surface of the bean will become wrinkled. Co2 continues to be created and the pressure builds within the bean as it approaches first crack.

First Crack

Here the pressure of gas inside the bean becomes too much and the bean cracks as the gas is discharged. The beans greatly grow in size and while in first crack the beans give off heat (making them exothermic) but afterwards they return to absorbing heat. The internal temperature of the beans is approximately 355°F when first crack begins.

Precision Brew Coffee Makers by Grindmaster

This article is in response to a request by one of my blog readers. What does precision brew really mean and what coffee-making products are included with this prefix will be covered in this article. There are actually two parts to these coffee makers, the brewers and the types of containers they brew into.

Precision Brew brewers begin with pod brewers. The heavy-duty commercial brewer has a dual water system that allows the unit to be plumbed into a water line or manually filled while the light duty must be manually filled. The water reservoir can be easily removed from either pod brewer for filling. Both are designed to accept all commercial pods and larger size cups or mugs and offer 3 brew strength settings plus a tea setting.

In addition Precision Brew brewer are designed for serviceability. The die-cast aluminum heater has two high-tech, baked on, anti-scaling coatings to prevent corrosion. The hot water tank can be easily removed by disconnecting electrical and water connections and removing two no-tool fastening pins. The internal tubing is color-coded for ease of reconnection. A cooling fan prolongs component life inside the brewer and spreads the coffee aroma throughout the room. An external control board connector allows field reprogramming without opening the unit. A patented door assembly rolls on permanently lubricated ball bearings. The drawer can be easily removed by the removal of just one screw.

Precision Brewers that are digitally controlled brewers are made for four distinct types of containers. The B-ID brews into a 1.9 stainless steel vacuum insulated container. The B-3 and B-6 offer a single brewer and two warmers on top and a double brewer with four warmers on top respectively. A B-3WL and B-3WR offer a single brewer with warmers on the left or right side; all of these accept a glass decanter. The B-SAP brewer accepts a 2.2 liter airpot while the B-DAP are brewer accepts a 2.2 liter and a 2.5 liter airpot. Model B-DGP is a twin brewer accepts only 2.5 liter vacuum insulated gravity containers. All of these brewers will maintain a brewing temperature within plus of minus 1 degree Fahrenheit. The brewers will also extract up to 20% more dissolved solids per batch of coffee through pulse brewing and timing, which is programmable. This pulsing will not alter the coffee volume. A preset low-temperature no brew allows the brew cycle to begin only if it has reached an optimum brew temperature. Additional features include a counter that counts the number of brew cycles for preventive maintenance. Another feature is the brewer settings can be locked to prevent tampering. Brew volume can be set in a “teach” mode to eliminate trial and error set up or by minutes and seconds once determined.

Gourmet coffee drinks at home are easy to make with a few simple tips listed in this article.

Cappuccino and cafe latte are favorites that many coffee lovers order at the coffee shop. If you would like to make these coffee drinks at home, here are some simple instructions, to save money and avoid a trip to the coffee house. At home you can experiment with making your favorites, for pennies per drink instead of paying coffee house prices.

This article gives simple, plain language to brew and serve great coffee drinks.

Both the cappuccino and cafe latte are based on espresso. Let’s assume that you have a standard espresso machine capable of foaming (frothing) milk. In addition, you’ll need to have gourmet coffee beans finely ground for espresso, milk (I prefer skim milk) , and the flavoring you want (optional but lots of people like chocolate).

Making espresso at home

Cappuccino and latte drinks both begin with espresso. To make espresso shots, you place your ground espresso into the portafilter, press to  compact the ground coffee, leaving the coffee’s top surface smooth. Then place the filter into the machine and start steaming the milk to at least 140 degrees or slightly hotter if you prefer. By heating the milk without waiting for the espresso, you can start mixing your specialty drink immediately after the espresso is brewed.

Once you’ve brewed two ounces of espresso for one drink, you can follow the instructions for cappuccino and latte shown below.

Cappuccino recipe prepared at home

Steam your milk with extra foam – cappuccino requires extra foam in the milk. Tip the pitcher holding the heated milk and bring the steaming apparatus (wand) just under the top surface, raising the steam wand as the foam is created but keeping the wand just below the surface. Make foam enough to fill one third of your coffee mug. When the foam is ready, turn off the steam wand. Follow the rest of the instructions in the order listed.

Brew – pour your espresso shots into the cup first.

Add milk – add hot milk to fill your cup two thirds full.

Add foam – finish filling your cup with foam you spoon into the cup, and your cappuccino is ready to enjoy!

For flavored cappuccino, place flavoring into your cup before you add the espresso shots. Stir the flavoring with the espresso and milk, then add the foam topping.

Cafe latte home recipe

Cafe latte is prepared the same way, except you use less foam.  So, you’ll use the steam wand to warm the milk and create a little foam, and brew the espresso shots. Add the espresso shots to your cup, fill the cup nearly full with heated milk, and leave room for a short layer of foam. Some people add whipped cream, but that is optional.

As with cappuccino, for a flavored latte you add syrup or other flavor into the cup first, and stir it into the shots and heated milk.

Cappuccino and cafe latte are both much easier now, right?

Once you’re comfortable preparing basic latte and cappuccino drinks, you can start experimenting with different flavors of espresso beverages.
